Ok, so I know Winter is a month behind us. But, I'm in Melbourne and it is completely normal for Winter to stay way past it's use by date and then continue to drop in unannounced every so often.
Today the boys wore shorts and t-shirts. Today we had a bbq for lunch. Today the washing came in off the line dry. Today I drove with the window down. Today we opened up every window in the house.
Today, it felt a little bit like Summer. So, here I am saying goodbye to Winter. I'm ready to pack dressing gowns and slippers away. I'm not even going to get all sentimental about hot chocolates and cozy evening under a blanket. Nuh-uh. Not me. Bring on the sunshine.
But before we do....I'll just share one of my fave winter warmers. True comfort food. Old fashioned bread and butter pudding. Simple. Sweet.
Take four slices of stale white bread, jam, butter, eggs, milk and sugar.
Grease your baking dish.
Spread bread, all the way to the edges, with butter and a generous lashing of jam. Cut into quarters and arrange in your baking dish. Lick your sticky fingers.
Whisk, just with a fork is fine, 500ml milk, 2 eggs and 2 dessertspoons of castor sugar. Pour over bread.
Bake at 180 for about half an hour. Check you have cream a plenty. If not, nick out and get some while your pud bakes. You'll need it.
Ummm, so I forgot to take a photo of it before we scoffed it.....
